Fragrant with vanilla and apples, melting in the mouth real pancakes, is one of my childhood memories and the taste of summer breakfast, dinner and even alternative supper. Especially in the fruit season, when there was a lot of apples in our orchard.

In front of the house grew apples – as the first mature “Papierówki”, and with them set the season of the cucumber.

Late autumn on the top were apple pie and apple cider from Antonowek.

But that was the taste!

And no one bothered,

That there is a white wheat flour used,
– That there is u
nhealthy refined sugar,
That milk is straight from the cow,
– 
That in the frying pan the pancakes were sunk in fat,

And the biggest dream was the thickest layer of icing sugar.

Everyone was happy and no one was obsessed with “free” and “light” products.

Times change, food and its production also.

This is how it is, that every decade is governed by own  laws and you know what? The same pancakes in today’s world does no longer taste so good…

Keeping a bit of tradition, but taking into account the beneficial and health impact of health food, a modified recipe for pancakes with apples has been created.

The recipe is plainly simple and fast, moreover, you can eat it all regardless of age and gender. Pancakes is for me a sentimental journey to the times when I was a child and I was running among fruit trees, taking care of what gave birth to nature 🙂

Oat pancakes with apple inside

Ingredients
  • 3/4 glass plain oatmeal (not instant)
  • 3/4 glass of your favorite vegetable milk I used this time rice milk, because it gives a natural, slightly sweet taste)
  • 1 medium apple
  • 1 tablespoon sunflower seeds
  • 1 tablespoon of pumpkin seeds
  • 1 tablespoon of linseed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon of xylitol or stevia (for those with a sweet taste)
  • 1 pinch of himalayan salt
  • clear butter or coconut oil for frying
Instructions
  1. Oatmeal flakes with warm milk and leave for about 10 minutes until they soften and create a "glue" that will also stick to the frying chain (no need to use the egg).

  2. We do not peel apples - we leave them with peel, which further enriches the nuts in valuable fiber, vitamins and minerals.
  3. Half of the apples are rubbed on thick-meshed rubs and the other half cut into small particles and added to the milk flakes. We add sunflower seeds, pumpkin and sage, add cinnamon, sweetener and a pinch of salt. We mix and if necessary, if the mass is too thick, still poured milk.
  4. Let stand for about 5 minutes and then fry in a hot pan on butter or coconut oil fry.
  5. We eat hot with favorite tops.

Small, inconspicuous balls, insanely sweet, rejuvenate the body and add energy kick. Excellent as a dessert or snack when we feel the decline of vital forces. They may be our lifebuoy in times of wolf hunger, and we have no opportunity to eat a valuable meal. They work great and “recharge batteries” for me to continue working. My husband consumes them by necessity, so as soon as they are made, they disappear.

Their unique sweet taste owes to the ripening dates in full sun. For me the dates are back to the taste of childhood and toffee candy, which were sticky teeth, were terribly sweet, but they enjoyed, because they were one of the few available “delicacies”. Such feelings rooted in us are due to the fact that sweet taste is associated with a sense of security, proximity and comfort.

This state can be achieved by the natural ingredient of the date.

Rejuvenating properties are the result of the presence of almonds. Almonds as the only nuts work alkaline on the body and do not acidify it.

According to Ayurveda, they increase intellectual capacity and influence longevity. In addition, they are a rich source of vitamin E and magnesium and tryptophan – youth, calm and joy in one!

Powdered Macy root (Lepidum peruvianum), as another, has gained the title of “super food”, thanks to the unique effect on the hormonal system, enhancing and enhancing energy levels. Maca is also considered an aphrodisiac, which improves the fertility of women and men.

Ingredients
  • 1 cup f dates (preferably organic, deprived of pips)
  • 1 glass of almonds
  • 1 teaspoon powdered mace root
  • a pinch of Himalayan salt
  • for sprinkels: uncoated coconut shavings and raw cocoa (or carob)
Instructions
  1. Dates we burn with boiling water. Together with almonds, powdered macaque and salt we grind or weave until a uniform, compact mass is obtained.
  2. With moist hands we stick balls and depending on taste tastes in coconut shavings and raw cocoa or karobie.
Recipe Notes

They taste the best after chilling, but eaten “right away” are also phenomenal.

You can also add a whole almond to the center of the ball.

When you buy dried fruits, pay attention to whether they have been artificially preserved and sweetened. The best ones are organic, and even better as we ourselves are tempted to dry them, of course as far as availability and possibility.

Similarly nuts: we choose these in shells because they keep fresh longer (they do not rust and do not mold as quickly as they are hulled).

Instructions
  1. Daktyle sparzamy wrzątkiem. Razem z migdałami, sproszkowaną macą i solą mielimy bądź blendujemy do momentu uzyskania jednolitej, zwartej masy.

    Wilgotnymi rękoma lepimy kuleczki i w zależności od upodobań smakowych obtaczamy w wiórkach kokosowych i surowym kakao bądź karobie.

    Najlepiej smakują po schłodzeniu, ale zjadane „od razu” są również fenomenalne.

    Kuleczki można wzbogacić o dodatek całego migdała do środka.

    Działania odmładzającego nigdy dość!

Vital bread

Is there a bread baked with vitamins, minerals and healthy fats? To this without wheat, yeast, flavor improvers, preservatives and dyes?

Of course!

It offers you natural, full of crunchy grains, pistachios, oatmeal vitamins, which strengthen, cleanse and energize.

This is also a great proposal for vegan because it does not contain ingredients of animal origin.

It perfectly fits the diet of both women and men.

But why? Let me explain….

The breadbasket is oatmeal, which soothes and strengthens the body, improves its metabolism, thanks to high dietary fiber (in particular thanks to the presence of beta glucan which, among other things, supports the immune system, regulates the lipid economy). In addition, they contain large amounts of vegetable protein, are a source of selenium, magnesium, iron and zinc, and naturally occurring silicon supports and regenerates the skeletal system and connective tissue.

Sunflower seeds, linseed, chia seeds, pistachio and pumpkin seeds are a treasure trove of unsaturated fatty acids, dietary fiber, vitamin E commonly called vitamins of youth.

For me, it is a real “superfoods” in what nature offers us in the purest form, and recently a little forgotten pumpkin seeds.

Servings: 1 bread
Ingredients
  • 1 cup oatmeal (ordinary, less processed and processed)
  • 1/2 cup of mixed grains (in proportional proportions): sunflower, flaxseed, sesame
  • 1/2 cup of pumpkin seeds
  • 3 tablespoons of chia seeds
  • a hand of pistachios without skulls
  • 2 tablespoons chickpea flour
  • 1 tablespoon of coconut oil (preferably unrefined)
  • 1/2 teaspoon of Himalayan salt
  • 1/2 teaspoon dried thyme (or other favorite herbs)
Instructions
  1. Oatmeal and seeds split with warm water (not hot, not to lose all valuable nutrients divided – mainly omega 3 and antioxidants). Let’s stand for 10 min.
  2. During this time, the seeds, pumpkin seeds and pistachios gently grind or blister, but retain their structure. We combine with soaked oatmeal.
  3. We add flour, Himalayan salt, thyme and a teaspoon of yeast.
  4. Mix, transfer to greased molds – biscuits and bake for about 30 min at 350⁰ F.

Bread is addictive, beautifully smells and tastes even better!

 

 

Good to know:

Pumpkin seeds should be boiled in a dry pan before eating to get rid of E. coli colonies (if contaminated).
By buying seeds and nuts, we choose these in shell and shell – they are worth much better because the fats contained in them are not oxidized and deodorized.
