Colorful Zucchini & Quinoa Tart

In fact, it is not only from the quinoa and zucchini, but from the colorful vegetables.

It’s a great food idea for parties.

It tastes served warm – straight from the oven or cut into triangles (like pizza) served cold.

It’s one of my “crowned” and favorite party dishes.

Fast and extremely easy to make.

Very light and nourishing, full of plant protein and fiber.

Prepare it and the guests will be delighted;)


Zucchini & Quinoa Tart

Servings: 6 people
  • 1 cup cooked tri-color quinoa
  • 2 medium zucchini
  • ½ medium onion
  • ½ yellow pepper
  • ½ red pepper
  • 1/3 cup shredded mozzarella
  • 2 large organic eggs
  • ½ tsp thyme
  • ½ tsp oregano
  • To taste: Himalayan salt , freshly ground pepper
  • On top: kalamata olives and cocktail tomatoes
  1. Preheat oven to 375 degrees F.
  2. Shredded zucchini (with skin), squeeze and drain.
  3. Cut peppers and onion into small cubes.
  4. Add cooked quinoa, zucchini, shredded mozzarella and eggs.
  5. Put the thyme, oregano, salt and pepper and mix together.
  6. Pour the mixture to tart dish. Place tomatoes and olives on top (half-cut).
  7. Bake for about 1 hour.
